Sauvignon Blanc
Tumbarumba, New South Wales
Barrel ferment, slightly 'Sancere style', nice texture and complexity- tropical
$28 each
Made in the traditional 'Fume Blanc' style, the wine is matured on yeast lees in French oak barrels for 18 months. This time in oak helps to produce a wine that is light, bright golden straw in colour with a complex nose of lychee and passionfruit with a savoury finish. The palate is beautifully balanced with acid, oak and bright fruit- long and textual with an abundance of flavours oscillating between tropical fruit and ginger spice.

The A.Retief Sauvignon Blanc draws on winemaker Alex Retief’s two year stint in Bordeaux, where he developed a love of the “Bordeaux Blanc”. This wine, like traditional-style Bordeaux whites, is crafted by using French oak during fermentation as well as maturation in barrel on yeast lees.
Sauvignon Blanc from cool climate areas has naturally high acid levels and the oak adds texture and structure to the palate.
Made in the traditional ‘Bordeaux style’, fermented in French oak barriques with 16 months on yeast lees, the wine has an extra level of structure and complexity.
The wine has a nose of stone fruit, guava and melon, with an almost toffee edge.
The palate is lightly textured, beautifully complex and full with the natural fruit acids leading to a long fresh finish.
